How to tell if your figs are ripe (with Celeste examples)
Underripe
You can tell a fig is underripe if it is mostly green in color, and is stiff to the touch. Generally when picked,
these figs put up a fight. The skin will also be fairly thick and dense. If very unripe, the figs inside might be white,
green; lacking the vibrant yellow or pink color that ripe figs have. If only somewhat unripe, they might have a slightly green
tint to the fig, and might be less droopy than a perfectly ripe fig.
Ripe
A fig that is ripe and ready to eat will have a hint of color. It will be squishy to the touch, and have the start of small cracks in the skin. The space between
the fig skin and the red inside will be small, and the inside of the fig will look wet. Many customers prefer this firmer fig to the perfectly ripe fig below.
Perfectly Ripe
A perfectly ripe fig can look overripe- which is why its important to know the difference. A ripe fig will be droopy, and some of the best
will have small cracks on the skin (which is shown in the picture). It will be mooshy and droopy, but not enough that the skin immediately breaks
when touched.
Overripe
Overripe figs are actually generally better than underripe figs. Some figs that look overripe will be the best figs you will ever have - the
older the fig, the sweeter the taste. For a truly overripe fig, there might be brown bruises, and appear almost wet. When the skin is broken, the area will be
brown underneath. The inside of the fig when opened up will also appear to have brown spots and smell sour.

Figs are generally used in baked goods such as pastries, charcuterie boards, or as jam. Our favorite food with figs is figs, honey and goat cheese. Fig leaves are used for teas, cooking, baking, and even fish tanks. They are also used as decor (for example: table decorations or placemats for food). As for the
tea leaves, we like to mixit with other flavors -- our favorite is apple fig tea with honey.
